So this was quite the weekend for baking.
Saturday morning I made banana cake from my mum’s trusty recipe. Sunday morning I made fastelavnsbolle. And Sunday evening after church I made this cauliflower and caramelised onion tart.
It’s from Deb’s recipe on Smitten Kitchen and I’ve made it once before, for a girl’s night in with some friends. I used cream cheese and milk for instead of mascapone and cream – so it’s very slightly more healthy?!
I made it again yesterday because I’m trying to bring a “packed lunch” each day for work rather than buying it. The cafes and sandwich shops around my office are mostly pretty expensive, probably because half the lunches eaten are claimed back as expenses. But it all adds up, and really, my home cooking is often just as good (or better!) than what you can buy around here, so it makes sense to do it this way.
Do you take your lunch in to work? Any good suggestions?
