So I might be loving the summery weather Brussels is still experiencing, but I am certainly not going to miss out on the joys of pumpkin season!
We had friends over for lunch yesterday, and we decided to make soup. Rasmus wanted something with chorizo, I added the idea of chickpeas, and then remembered the beautiful pumpkins popping up in all the stores, and the meal was born!
In the end, I just googled “pumpkin chorizo and chickpea soup” and went with the first recipe that google provided me with, from a blog called Fig & Cherry. The writer, Christie, lives in Sydney and a brief look through the rest of her website has added a new favourite site to my ever-increasing list of good recipe sources.
I didn’t have time to photograph the soup in bowls, so you get the quickly-snapped-in-the-pan shot, but trust me this was GOOD soup. The sweetness of the pumpkin contrasts really nicely with the spiciness of the chorizo and the paprika. And it’s such a happy colour (which if you have more typical autumn weather than Brussels, might be very welcome). I highly recommend finding your nearest pumpkin patch and cooking up a batch as soon as you can 🙂
