Lemon Meringue Pie

Despite the hot hot weather I’ve still been braving the kitchen for some baking. Hot weather requires food that is refreshing and what is more refreshing than lemon?

My mum makes LMP quite often at home. I made this for the first time a few months ago when we had friends round for dinner. I made four “individual” sized pies which turned out to be better suited for two. Not that that upset me because it meant there was leftovers the next day 🙂

Last week I got invited round to a friend’s house for dinner with a request to bring dessert so I decided to repeat my LMP but this time in one big dish. Despite a few hiccups along the way (pastry sticking, forgot to buy an orange, meringue puffed up huge and then sunk in the middle) it turned out perfectly edible. And again was big enough that there were leftovers the next night!

If you’re wondering, I use Angela Nilsen’s “Ultimate” LMP recipe from the BBC Good Food website. She makes the pastry from scratch – I cheated both times and used pre-made, pre-rolled pastry from the shop… 🙂
